Coconut Milk Shake

Want to try something new...Here is another one from me!It's simple and easy..

Ingredients :

Coconut milk - 1 cup

kasakasa(Poppy seeds) - 2 tsp

Sugar - 1 tbsp

Cardamom powder - 1/4 tsp



Preparation :

Grate some coconut..Put the grated coconut in a blender and strain the liquid to get the coconut milk...To the milk obtained add kasakasa(Poppy seeds),sugar and cardamom powder and mix well..Try it..It is good for stomach ulcers and even for ulcers in the mouth!

Bread Masala

Ingredients :

Bread slices : 5

Eggs : 1,beaten

Tomato : 1,medium sized,chopped

Onion : 1,medium sized,chopped

Turmeric powder : 1/2 tsp

Garam masala : 1/2 tsp

Red chilli powder : 1/2 tsp

Coriander powder : 1/2 tsp

Salt : according to taste

Oil : 1 tsp

Preparation :

Cut the slices of bread in to small cubes..Do not cut them too small as they can get mashed!Heat oil in a pan and add the chopped onion and fry till golden brown..Now add the chopped tomato pieces and cook for sometime..Once done,add the coriander,chilli,garam masala and turmeric powders and stir well and cook...Finally add the bread cubes and mix it well with the masala...Add the beaten egg and mix it well with the bread..

Serve hot..Kids will love this dish..It can be had any time..

If you are using a full bread use 3 eggs..Similarly increase the quantity of the other ingredients also..

Semiya Payasam

Ingredients
1 Cup vermicelli

1 Cup sugar

1 Litre fat free milk

10 Raisins

10 Cashews

2 to 3 Tsp ghee

4 to 5 cardamoms

Preparation:

In a medium sized pan add the ghee and heat on low flame..Toss in the vermicelli and fry till golden brown..Fry the cashews and raisins again in little ghee..

Now heat the milk in a pan on medium heat...Thicken the milk a little by keep it on low flame for sometime...This adds more taste to the payasam..Now add the fried vermicelli and simmer,stirring occasionally,till it softens...Mix in the sugar and thicken to the desired consistency...Garnish with cashews,raisins and cardamoms...Cardamoms can be powdered and added also...

Enjoy the payasam!!!


Beef Chopsuey

Ingredients :

Beef cut in to small cubes : 250 g

Onion : 2,medium, diced

Green chilli : 2 ,chopped

Ginger Paste : 1 tsp

Garlic Paste : 1tsp

Garlic chopped : 5 cloves

Dried red chilli : 2

Chilli sauce : 1 tsp

Pepper powder : 1 tsp

Salt : according to taste

Oil : 1 tsp

For marinade -

Lime juice : 2 tbsp

Pepper powder : 1/2 tsp

Preparation :

Marinate the beef with lemon juice,pepper powder and salt for half an hour..Cook the beef in a cooker for 30 min till done..Heat oil in a non stick pan..Add the ginger and garlic pastes and saute till the raw smell leaves..Then add the chopped green chilli and dried red chilli paste,chopped garlic and the diced onion..Saute all this well in the pan till it becomes crunchy..Add the chilli sauce and salt and saute again..Now add the cooked beef pieces and saute..Finally add the pepper powder and saute well..The dish is ready..

Serve with rice,chapathi,roti

Sardine fry - Nethali Meen Varuval - Mathi

Sardines are rich in omega 3 fatty acids which reduces the occurence of cardiovascular disease..These help to reduce blood sugar levels also up to a level..


Ingredients :

Nethali meen/Sardines : 200 g

Onion : 1,chopped finely

Tamarind water : 1 tbsp

Mustard : 1/2 tsp

Red chillies : 2

Tomato : 1,chopped

Curry leaves : few

Garlic : Finely chopped

Ginger : 1 cm,finely cut

Chilli powder : 1/2 tsp

Turmeric powder : 1/4 tsp

Coriander powder: 2 tsp

Oil : 1 tsp

Salt to taste

Preparation :

Clean the fish well..Add the oil to a pan and season with mustard,red chillies and curry leaves..Now add the finely chopped onion and saute well..Add the ginger and garlic and saute for sometime..Once done,add the chopped tomato pieces..Let this cook for a while..Then add the chilli powder,turmeric powder and the coriander powder and cook till the raw smell disappears.. Once done,add the tamarind water and add salt to it..Now add the fish and let it cook till the fish takes in the lovely masala and the water is absorbed by the heat..The fish is ready..This preparation does not need any coconut..

Cucumber - Butter Milk Shake

Ingredients :

Cucumber : 1/2 kg

Butter Milk : 2 litres

Ginger : 1 cm

Green chilly : 1,small

Asafoetida : A pinch

Salt : according to your taste..

Preparation :

Clean the cucumber and chop in to small chunks..Put them in a blender and add little butter milk,chilly,salt,asafoetida and ginger and grind well..Once it has become smooth and you see frothy mixture,you may add the remaining butter milk and blend again..In case you want to make it for a single person do reduce the quantity of the ingredients..You can make the drink with chilled butter milk!

Chicken Biryani

Ingredients :

Chicken : 900 g,cut in to large pieces/small pieces

Basmati rice : 2 and 1/2 cups

Onion : 1,medium sized

Tomatoes : 2,medium sized

Garlic paste : 2 tbsp

Ginger paste : 1 tbsp

Turmeric powder : 1/2 tsp

Chilli powder : 1 tsp

Salt to taste

Green chillies : 2,slit

Spices :-To be made in to paste

Coriander seeds : 2 tsp

Cumin seeds : 1tsp

Pepper : 4 to 5

Cinnamon stick : 1

Cardamoms : 2

Cloves : 4 to 5

Coriander leaves : few,chopped

Mint leaves : few,chopped

Oil/ghee : 1 tbsp

Preparation :

In a large pan add the oil/ghee and saute the onion till they turn golden brown..The add the giner and garlic pastes..once they release the aroma,add the sliced tomatoes followed by the spice paste and then the turmeric and chilli powders..Add salt also..Once the masala gets cooked,add the chicken pieces and roast the pieces for sometime..The chicken pieces should become tender..Cook for about 15 minutes..I use an electric rice cooker to cook rice because that is easier for me!So i have to just transfer this to the cooker to which i have already added the basmati rice and 4 and 1/2 cups of water..The biryani will be ready in about 15 to 20 minutes..I served with chicken nihari....

Banana Milk Shake

I love milk shakes..iam sure most of us do..Banana milk shake is the easiest to make milk shake that one can make at home..

Ingredients :

Ripe bananas : 2

Sugar : according to your taste..

Cardamom powder : 1/4 tsp

Cold milk : 1 cup

Preparation :

Cut up the bananas in to chunks..Add half the cup of cold milk in the blender and add the chunks of bananas in..Blend well till the chunks are gone..Add the remaining milk and sugar...And blend again..You should see some creamy texture with frothy bubbles..Finally add the cardamom powder..This will increase the flavor...This can be easily done at home...I love this..Make it often..

P.S.Serve immediately as bananas darken and will spoil the milkshake..

Curry Leaves Juice

Ingredients :

Curry leaves : 1/4 cup

Fenugreek : 1/2 tsp

Jeera : 1/2 tsp

Dried ginger/chukku Podi : 1 tsp

Lime juice : 1 tbsp

Preparation :

In a pan add curry leaves,fenugreek,chukku podi and jeera and fry on low heat..Add water now and boil this mixture well for sometime..Strain the juice and add sugar and lime juice to this and mix well..A healthy curry leaves juice is ready...This good for indigestion..

Porikadala Chutney

Ingredients :

Porikadala : 1/2 cup
(bengal gram)

Ginger : 1cm

Green chilly : 1

Curry leaves : few

Tamarind : little

Salt : according to your taste

Preparation :

In a mixer add the porikaddala,curry leaves,ginger,green chilly,tamarind and salt...Add little water also..once you get a smooth paste remove from the mixer..Porikkadala chutney is ready...

Wheat Uppuma

Ingredients :

Wheat sooji : 1 cup

Onion : 1,sliced

water : 2 cups

Red chilly : 1

Ural dhal : 1/4 tsp

Mustard : 1/4 tsp

Curry leaves : few

Oil : 1/2 tsp

Preparation:

In a pan add the oil and heat on medium heat..Once heated,add the mustard,red chilly,urad dhal,sliced onion and curry leaves and season..Now add 2 cups of water..Add little salt and boil...Once it has boiled well,add the wheat sooji and stir well..The sooji gets cooked in this water and takes up all the moisture on heat..Wheat upma is ready..

Easy to make breakfast!

Three In One Cocktail

Ingredients :

Carrot - 1,large

Beetroot medium - 1

Lime Juice - 1/4 cup

Honey - according to your taste

Preparation :

Clean up the vegetables..You can either chop them or grate them...Then put beetroot and carrot  in a blender and grind them fine..Sieve up then contents and add little water...Add the lime extract and honey to this..Three in one cocktail is ready...It is very healthy...Trust me!It has carotene and vitamin c ..

Butter Cookies

I love butter cookies...Back in school days i remember having them almost everyday...My favorite ones are danish butter cookies...A box of cookies used to get over so fast...I loved them so much...Iam basically a lover of sweets...i love snacks!!
I have not been baking for sometime before and after my daughter's birth...Now i have started...I love baking..My mother in law tells me that she loves the smell that arises whenever iam baking something!!Have started baking now as my daughter loves cakes and cookies!

Ingredients :

1 cup  unsalted butter


1 cup  sugar

1 egg

1 tsp  vanilla essence

2 1/2 cups sifted all-purpose flour

1 tsp salt
 
Preparation :
 
Cream butter and sugar until light and fluffy in a large bowl....I used an electric mixer..If you dont have one..You can do it manually..Make sure it is light and fluffy..Add vanilla essence.. Sift together flour, salt, and baking powder.Add the flour into butter mixture.. Mix well till the flour is incorporated in to the butter mixture and blended..Shape dough into small balls. Place on ungreased cookie sheets.Keep the cookies one inch apart from each other...Bake butter cookies at over 300° for 20 minutes, or until just lightly browned.Butter cookies are ready to be eaten once they have cooled down..Store in an air tight container..These make a great snack!!I just love them..

Chicken Nihari

Ingredients

Chicken - 1 kg

Onion - 2 medium sized, sliced

Garlic paste - 1tsp

Ginger paste - 1tsp

Salt to taste

Chilli powder - 1 and 1/2 tsp

Yoghurt - 1 cup

Cumin seeds - 1 tsp

Cinnamon sticks - 2

Green cardamom - 3

Black pepper seeds - 4

Cloves - 4

Oil - 4 tbsp

Water - 4 cups

Lemon

Flour - 2 tbsp

Preparation:

Pour oil on a large pan...Fry the onions for atleast 10 minutes till they becomes golden brown..Add the chicken pieces and fry them for few minutes till their colour changes and then add the ginger and garlic pastes..Add salt and chilli powder...Fry this for about 10 minutes...Add the yoghurt and cook till the moisture has dried...Now add 3 cups of water...Let this cook for atleast 30 minutes till the chicken is cooked and is tender...Grind all the spices together and add in to the curry..Cook on low heat..Mix the flour in 1 cup of water and add this to the pan...Now the curry becomes thick...Cook for another 5 minutes...

Serve hot with chapathi,paratha or naan..

Beetroot Poriyal

Ingredients

Beet root - 1

Onion - half,chooped

Green chilly - 1

Oil - 1/2 tsp-for seasoning

Mustard - 1/4 tsp-for seasoning

Salt to taste

Grated coconut - 1 tbsp

Curry leaves - few

Preparation:

Chop the beet root in to small pieces..In a pan on medium flame,add oil and season with mustard and curry leaves..Cook the beetroot along with the chopped onion on medium flame....Once it is cooked add the grated coconut,green chilly and salt and mix well...cook this for a few more minutes...Beetroot poriyal is ready!

Drumstick Curry - Murungakka kulambu

Murungakka kulambu tastes yummy..



Ingredients

Drum sticks - 2

Grated coconut - 1 tbsp

Jeera - 1/2 tsp

Onion - small - few

Garlic - 1 clove

Oil - 1/2 tsp - for seasoning

Mustard - 1/4 tsp

Red chilly - 1

Turmeric powder - a pinch

Curry leaves - few

Preparation:

Clean the drumsticks and chop them in to small pieces..In a pan add the oil and keep on medium flame..Season with mustard and curry leaves..Cook the drumsticks along with the small onions in little water...In a mixer grind together the coconut,jeera and red chilly...Add this paste to the cooked drum sticks..Add a pinch of turmeric powder and salt..Add some more water and cook for 3 minutesThe drumstick curry is done!

Fish Fry 1

Ingredients

Chilli powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Salt - To taste

Oil - 1 Tbsp

Preparation:

Clean the fish pieces and add the above masala and marinate for about 10 minutes ..Then fry the fish pieces in oil...Once they are done,keep the fish pieces on a tissue paper so that the excess oil will be absorbed..

Vegetable Pulao

Ingredients

1 Cup Basmati rice

1 medium potato,diced

6 French beans,cut in to small pieces

1 medium sized carrot

1 large tomato

1-2 green chilles,slit

1 medium onion,sliced

1 tsp garlic paste

1/2 tsp ginger paste

1 piece cinnamon stick

2 cloves

2 green cardamoms

3-4 tbsp chopped coriander leaves

2-3 tbsp chopped mint leaves

2 cups water

Salt to taste

1/2 tsp chilli powder

1/4 tsp turmeric powder

1 tsp garam masala powder

1.2 tsp ghee/oil

Preparation

In a pan add the ghee or oil and add in the onions..saute well..add the cinnamon,cloves and cardomom..followed by the ginger-garlic paste...Then add the tomatoes .Now add the chilli powder,turmeric powder and garam masala powder and saute well.Add the other vegetables given in the ingredients.Cover the pan for sometime.

Add the rice.Before adding,dry up all the excess moisture present in the rice on medium heat.Add the water,green chillies,coriander leaves,mint leaves and salt to taste.Cover and cook for 15 min till rice is done.Remove from heat and keep the pan covered till rice is served..Pulao is ready!

Mysore Pak

Mysore pak is a sweet that everybody loves..The sweet is a melt in the mouth experience for many...



Ingredients

1 Cup gram flour

1 Cup sugar

1/4 Cup water

1 And 1/2 cup groundnut oil

Preparation:

Place a pan on medium heat...

Add the sugar to the pan and heat till the sugar dissolves completely...

Lower the heat and pour in the oil...

Let the mixture gently bubble...

Now add the gram flour and cook,stirring occasionally...

After 5 to 7 minutes,the mixture will begin to look slightly porous..

Stir continuously till the mixture begins to rise and leaves the sides of the unit...

Remove from heat and immediately pour on to a greased tray..

Let it cool for sometime..

Cut in to rectangles or squares of your choice...

You may use ghee instead of the oil to increase flavour...

This is a favorite sweet for everybody!!

Tomato Cocktail

Ingredients

Ripe tomatoes-1/4 kg

Lime -1

Honey-1 tbsp

Sugar-According to your taste

White pepper powder-Acc to your taste

Salt-Acc to your taste

Preparation:

This is a very healthy preparation...Blend in the tomatoes and sugar in a mixer...Add the lime extract,honey,salt and pepper powder and mix well...Refridgerate and serve chilled!!

Cabbage Poriyal

Ingredients

Cabbage - 1/4 kg

Medium sized onion - 1,chopped

Green chilli - 2

Jeera - 1/2 tsp

Garlic - 2 cloves

Grated coconut - 1 tbsp

Curry leaves - few

Oil - For seasoning

Mustard - 1/4 tsp,for seasoning

Urad dhal - 1/2 tsp,for seasoning

Salt to taste

Preparation:

Chop the cabbage and onion in to tiny pieces...You can cut the green chilli also in to small pieces..Keep the pan on medium flame and add the oil...Season with urad dhal, mustard and curry leaves...Now add the cabbage,garlic, and onion.Add salt according to your taste....Sprinkle some water...Cook on low flame and keep stirring.Once it is cooked well,add in the coconut and jeera..Poriyal is ready...

Snake Gourd - Podalanga Poriyal

Ingredients

Snake gourd - 200 g

Onion - 1,medium sized,chopped

Dhal - 1 tbsp,cooked

Salt to taste

Oil - 1/2 tsp,for seasoning

Mustard - 1/4 tsp,for seasoning

Green chilli - 1

Garlic - 2 cloves

Curry leaves - few

Preparation:

Chop the snake-gourd,green chilli and onion in to small pieces...Cook a tbsp of dhal and keep it ready..Or you can make this vegetable the day you make dhal curry..That way you can take a tbsp of dhal easily..Now put the pan on the stove on a medium flame and add the oil...Season with mustard and curry leaves...Now add the snake gourd,onion,garlic,green chilli and salt...Sprinkle some water on this..Cook on low flame..Once it is cooked add the dhal and mix well..Now poriyal is ready...

Rasam

This is a tangy south indian appetiser...It is also commonly called as pepper water...It can be taken during a common cold...It is a great soother...
Ingredients

Large tomatoes,halved - 2

Lime sized tamarind balls - 2

Chopped coriander leaves - 3 to 4 tbsp

Asafoetida - a pinch

Turmeric powder - a pinch

Water - Enough quantity

Salt to taste

Spices - To be crushed

Garlic - 4 to 5 cloves

Pepper corns - 2 to 3 tsp

Cumin seeds - 1 tsp

For seasoning:

Mustard seeds - 1 tsp

Dry red chillies - 2 to 3

Curry leaves - few

Oil - 1 tsp

Preparation:

Soak the tamarind in 1 cup of hot water for sometime...Strain and keep the extract aside..Place the tomatoes with 2 cups of water in a pan on a medium heat..Mash the tomatoes well...Lower the heat...Add the crushed spices,turmeric powder,asafoetida and tamarind extract...Pour in enough water and add salt to taste...Simmer for 7 to 10 minutes....Sprinkle with coriander leaves...Take the pan off the heat...

For seasoning,add oil to a smaller pan and then add red chillies,curry leaves and mustard seeds...Cover and let the mustard seeds splatter...Remove from heat and pour over the rasam...Serve hot with rice!

Gulab Jamun

Ingredients

For the jamuns:

200 g Khoa

2 Tbsp grated cottage cheese or panner

4 tbsp refined flour

5 cardamom seeds

2 tsp sugar

A pinch of cooking soda

oil/ghee for frying


For the syrup:

2 cups sugar

2 drops of essence

2 cups water

a pinch of salt

Preparation:

Powder the cardomom seeds with the sugar and keep aside...

For the jamuns,place all the remaining ingredients in a large bowl..Knead in to a smooth dough..The dough must be lump free..Divide the dough in to 30 equal portions..Shape them in to small lime sized balls..

Heat a non stick pan and pour enough oil or ghee so that the jamuns can be immersed well for frying...Remember -jamuns increase in size while frying...Reduce the heat and fry jamuns in sets of 5 till they are golden brown in colour..Turn them over while they are in the oil/ghee so that they will get the uniform colour throughout...Fry all the jamuns the same way and place them on an oil absorbent paper/tissue...

To make the syrup-Pour the water and sugar in to another pan and keep on medium flame...keep stirring till all the sugar is dissolved in the water...Add rose essence..Add also a pinch of salt and cardamom peels for extra flavor..Can also add kumkum poo..Simmer on low flame till the syrup thickens...Transfer the jamuns in to the warm syrup..



Delicious jamuns are ready!!Kids love this!!

Mutton Kurma

Mutton kurma can be had with naan or even dosa..Tastes great...



Ingredients:

1/2 kg Mutton,chopped

1 Medium sized tomato,chopped

2 Medium onions,sliced

1/2 tsp Ginger paste

1 tsp Garlic paste

1/2 tsp refined flour mixed with in 1/4 cup of water

Salt to taste.

Spices needed:

2 Cloves

2 Cinnamon sticks

2 Green cardamom

4 Dry red chillies

2 tsp Coriander seeds

1/2 tsp oil

Preparation:

To a pan on medium flame,pour 1/2 tsp oil...

To this add the red chillies,coriander seeds,cloves,cardamoms and cinnamon sticks...

Fry the above on low heat till the spices release their aroma...

Remove from the pan and grind to a paste in the mixer...

To a pan add the chopped mutton pieces and let them get roasted for about 3 to 5 minutes...

The meat pores will close and seal in the moisture this way!!

Once the mutton pieces are slightly roasted,add in the sliced onions and the garlic paste..

Reduce to low heat till the onions are turn light yellow...

Add the spice paste now and mix well..

Once you have done so,you may add the ginger paste and fry well..

Finally add the tomatoes and salt to taste..Stir once or twice and cover and cook for 30 minutes till mutton is tender...

Pour in the flour water ad simmer till the gravy thickens...

Serve with rotis,Aapam
